Hey DL,You ever have runners n yellow rice made like chicken n yellow rice but with filleted, skinned runners w/o the bloodline. One of my regulars on the Reward used to bring it for the crew,It was Awesome!!!seriously.my top 5 would be.
    1-Snook-raw,blackened,broiled or fried
2-Hogfish & Scamp grouper.this is a tie since they are almost identical in taste & texture.
    3-Swordfish- grilled,blackened,broiled or fried
    4-Cobia- raw,blackened,fried or broiled
5- Dolphin-I hate to say it but it is one of the most versatile fish there is to cook,if you don't over cook it,you cant screw it up.

Honorable Mention-Tuna,Salmon(raw),Tilefish,Grouper(snowy,gag & black) and larger flounder

Vinny: What's opah like in flavor and texture? Those fish never made any sense to me. They don't have the look of a pelagic fish.

My 5 favorite saltwater fish to eat:
    Triggerfish
    Scamp
    Yellowfin Tuna
    Redfish
    Dolly Varden

As for the snappers, mingo/vermillion snapper is way better than any red snapper. It's sweeter and more delicate. Those who have endangered red snapper at the top of their list should try them side-by-side with a mingo.
