I fished in montauk for giants, but mostly up in the cape. We did more canyon trips than anything else. Boat lives on Fishers Island and Pt. Judith.

Default Sashimi time

A picture helps add a little more flavour than just saying an 800# Bluefin Tuna.

Warrior:

I don't know if there is a commercial market here for Bluefin; but I certainly have a freezer for them.

A commercial fish monger will have to answer that question for an accurate answer.

But from what I have learned by listening, is that the fish migrating from the Carribbean/Gulf are of inferior quality (for Sashimi, ie. sushi grade), compared to the same fish that have spent some time up North. It seems like they have been going through their mating rituals while hanging down south and have expended energy and spent there fat reserves. Then after getting to the cooler Northern waters again, they have the opportunity to fatten up again. That's when the professional sushi mongers start getting excited about hi-quality bluefins.

Not to say that tuna caught down here, in the South is no good. But from my personal experience cooked tuna can become very dry if it is not served rare. A fatty fish would remain moist even if cooked beyond rare, like swordfish for example.

And Swordfish belly is like "the bacon of the sea".

Hmmm, I just wonder how it would be, cooked in a pot of collard greens. I know it goes great in Seafood Paella, N~o.

Not sure if that is a completely accurate answer, but it may be just enough to keep a good discussion going.

Or perhaps better to keep it going on the Tuna Forum.
