Default Charter boats keep catch?

We've had a little discussion on another board discussing whether charters in FL charge their customers to keep their catch. Is it the norm here for the fish to belong to the boat? If so what do they do with it since it is illegal to sell it? The only charter I've done here is with Dean Panos where the fish are yours and are cleaned before you leave for home.

With sword fish I give my charters the first fish in the event of a second one the second goes to the captain and crew. If one is big and one is not I'll usually split the meat 50/50. I have found a lot of the people don't want or have the ability to travel with or store large amounts of meat. In that case it goes into our very large freezers and we live large eating swordfish every day until the meat is gone. I always clean the fish and steak it for them. If they want to put the meat in vacuum sealed bags which is what I recomend that is their part.
