Excellent eating, but if you eat more than 6-8oz make sure your near a toilet or at least some woods.

Drew, the oilfish tastes better than the sword. We got one about 60 lbs. last year. Great sushi and great grilled. . . nobody got sick out of the 15 or so people that ate it.

Kinda a little to far away to see the smooth skin on the Escolar. The meat was some A+ quality and everyone that had some enjoyed it. I don't think I'll see another Escolar or Oilfish in the near future but will make sure I get better pixs upclose.

Default oilfish

I don't know about California, but I know they jig for them at night in Japan. They also fish bait for them. Supposed to be pretty decent fighting on lighter tackle.

Default ESCOLAR

After some discussion was brought up a few weeks back, it appears that Drew's fish is an ESCOLAR.

It would probably be incorrect to continue the description of this fish (or the picture of this fish they are holding as an Oilfish).

See the photo of the fish that barefoot Roddy Hayes is holding up, along this thread somewhere and in the 2004 Gallery for a picture of an OILFISH.

Drew is holding ESCOLAR.

Roddy is holding OILFISH.

P.S. - Escolar served up as Sashimi has an excellent buttery rich flavor.

From some reading I have done about "Sushi Grade" fish a couple of things are done to the fish after landing to preserve the quality of the fish. (This reading was describing a Tuna but I suspect the method may be applicable to other fish. Look for another post about preparing fish as Sushi Grade.) RT
