Default Need Advice: Cleaning a Shark / Chum Basics

It has been a few years since I caught a shark but plan on going after some blacktips in a couple of weeks (surf fishing).

I would like to get some advice on how to clean a shark. What needs
to be completed before I put the shark on ice? What is the best way to actually "fillet" the shark?

I also starting making my own chum. I am a newbie when it comes to chum and just put a cow heart, liver and kidney through a meat grinder along with some mackeral. Would like some advice if possible here too.
