Default Cajun Swordfish Bites w/ Basil Lemon Mayo

This is so easy to make, but very impressive to serve.

1st you cube the swordfish into bites and drizzle olive oil on them. Make sure they are covered, but not dripping. Roll them in the cajun seasoning until covered. Make sure your grill is as hot as possible. You want to sear the bites by leaving them only for a minute so they are crisp on the outside but almost raw and tender on the inside. The Mayo is easy. All you do is mix together the basil & the mayo. Make sure it's finely chopped! Squeeze half a medium sized fresh lemon (taking out the seeds of course) and mix it all together.

The Presentation is the Most Important Part!

In a martini glass put a dollop of the mayo in the bottom of the glass. Place about six bites on top of the mayo. One more dollop of mayo on top. Take a slice of a whole lemon and make a slice from the middle to one side. You can slide this onto the rim of the glass so it stands up. If you have one whole basil leaf you can stand it up. That's it! It makes a great appetizer and looks like you were cooking all day!

Ingredients:
Swordfish Cubed
Olive Oil (you can use halepeno olive oil if you have it for extra kick!)
Cajun Seasoning
Mayo
Fresh Lemon
Fresh Finely Chopped Basil
Martini Glasses
