Default Deep-Drop Dinner

This has 2 parts that make a great meal. Since rosies are a common incidental catch when deep-dropping for tiles and grouper, here is a recipe that is used twice for a single meal.

Appetizer or Salad:
Rosefish Citrus Ceviché
-------------------------------
3 or 4 Blackbelly Rosefish
3 Limes (juiced)
1 Tangerine (juiced)
2 or 3 stalks each of finely chopped fresh Oregano and Cilantro
1 or 2 finely chopped fresh Scallions
1 teaspoon Lemon Zest
1 teaspoon salt

Fillet, skin, and dice Rosefish meat into 1/2-inch pieces. Stir all ingredients together in the lime/tangerine juice in a glass bowl. Cover. Place in fridge for 30 minutes. Stir, then back in the fridge for another 30 minutes. Drain and save the juice. Cover and place ceviché meat back in the fridge. (or eat it then if you're hungry)

Main Course:
Citrus-Marinated Fish

Use the juice that you drained from the ceviché to marinate your primary fish. (swordfish steaks, tilefish, grouper, queen snapper, barrelfish) Bake in the juice, adding some butter and cajun seasoning.

Serve side-by-side with the Rosefish Ceviché, or as salad & meal.
