Default Ginger Rub

My wife had bought some fresh ground ginger and decided to try it on the Sword steaks last night, little salt and pepper mixed in it and BAMM that shit was good, with a side of pasta with cabbage and ginger dressing mixed in.

I cook most of my fish with either pickled ginger or ginger dressing. The best way I've cooked swordfish is to marinate it overnight in Mr Yoshida's Original and grill each side about 11/2 - 2 minutes. I also slice the steaks about 3/4 thick.

Default has either one of you tried the recipe? well not me either.

You mean this recipe Mon?

Carol Lindgren's Broiled Parmesan Swordfish
2 pounds Fresh Swordfish Steaks
2 Tablespoons (Tbs.)Lemon Juice
1/2 cup Grated Parmesan Cheese
1/4 cup Margarine or Butter, softened
3 Tbs. Mayonnaise
3 Tbs. Chopped Green Onion (scallion)
1/4 tsp. Salt
Tabasco Sauce to Taste (approx. 1/8 tsp.)

Place swordfish steaks in single layer on baking dish. Brush with lemon juice. Combine remaining ingredients in a mixing bowl. Broil steaks 6 - 8 inches from heat until fish flakes easily with fork. Remove from heat. Spread with cheese mixture. Broil 2 -3 minutes until lightly brown. Enjoy!

I do not know about this recipe yet because I have not gotten past the 3 basic recipes I know. But you would hope that it would be a Classic.

So if you like the Ginger recipe Mon, you've got to try the swordfish lightly jerked. I make my jerk seasoning fresh and of course there is a bit of fresh ginger in it too. (Just follow Mike Grimm's jerked seasoning recipe found on this site and you should be on your way.) Easy does it though because the heat can build up on you.
