Soy Butter-Marinated Grilled Swordfish
Oct 20, 2004 10:34 am US/Eastern NEW YORK (CBS) Recipe for soy butter-marinated grilled swordfish with tomato salad, as seen on Tony's Table. For the soy butter marinade: 6 oz butter, melted 4 oz soy 2 oz garlic, sliced thin and toasted in olive oil 2 oz ginger, minced and toasted in olive oil Puree soy with garlic and ginger and then mix with melted butter. Marinate fish up to 3 hours before grilling. For the tomato salad: 1 pound ripe beefsteak tomatoes, peeled and seeded and chopped 1 Tablespoon salt 1 oz sliced garlic, toasted in olive oil 2 oz minced shallots, toasted in olive oil 5 oz red wine vinegar 2 oz extra virgin olive oil Mix all ingredients together and let sit for 1 hour, then drain. To serve Grill fish to medium rare, slice and serve over tomato salad and garnish with fresh basil, and a drizzle of the melted soy butter.
