DIFFICULTY OF PREPARATION: On a scale of Easy, Moderate, Difficult or Pain In The Ass - I rate this one as Difficult
INGREDIENTS: four 8-oz Grouper fillets 1 cup Parmesan cheese, shredded 1/2 Panko bread crumbs 1/2 cup Red Bell Pepper, finely chopped 1/2 cup Onion, finely chopped 1/4 cup Half-N-Half 1 tablespoon Garlic, minced 1 tablespoon fresh Parsley 1 tablespoon fresh Basil 10 oz Alfredo Sauce 1/2 stick real Butter non-stick cooking spray salt & pepper 1 tablespoon Olde Bay or substitute Italian-style gumbo rub PREPARATION Preheat oven to 425 degrees Spray non-stick on medium-size baking pan Place 4 Grouper fillets in pan, lightly season, set aside In a bowl, mix 1/2 cup shredded Parmesan cheese, 1/2 cup Panko bread crumbs, and 1 tablespoon Old Bay In a medium-sized skillet, place the 1/2 stick of real butter, 1/2 cup Red Bell Pepper, 1/2 cup Onion, 1 tablespoon minced Garlic, 1 tablespoon Parsley, 1 tablespoon Basil, and heat on medium-low until the onions are translucent Add 10 ozs Alfredo Sauce, 1/2 cup shredded Parmesan, and 1/4 cup Half-N-Half. Stir until smooth Use about 1 cup of the cream sauce to evenly cover each of the 4 Grouper fillets with a thich coating. Sprinkle Panko bread crumbs, Parmesan and Old Bay mixture evenly over each Grouper fillet Place on the high rack of the oven and bake for approx 20-25 minutes until the Panko bread crumbs turn golden brown Use the remaining portion of the cream sauce to pour over a side dish of pasta or rice. Goes well with iced tea, white wine or a light lager beer (I got this one out of Gaff Magazine but changed a couple things) Catch

They have something similar for swordfish on the LP site.

yeah, but I lost a couple or three teeth from their recipe. Their recipe called for braided line instead of vermicelli pasta, dammit!
