Unfortunately, at my house I am the only fish eater. So, needless to say, I don't get to cook and eat too much fish and my recipie book is empty.
We came back from a successful tuna run and I was ready to power up on some fresh loins. Wasn't sure how to cook them other than the ole soy and garlic marinade on the grill. I experimented with a new recipie and was pleasantly suprised with the results...here it goes: Ingredients: Yellowfin tuna steak 1-1/2"-2" thick Chili Lime Rub (from the Williams and Sonoma store) 1 jar of Hot Mango Chutney Heat up an iron skillet and coat the bottom with olive oil. Sprinkle the chili lime rub on the tuna steaks and sear them for 30-45 seconds per side. Heat up the Hot Mango Chutney in a dish in the microwave (or serve it cold) and pour it over the top of the tuna steak. Serve over rice (I like Basmatti rice the best). Qiuck and simple and never dissapointing. Bon-apatite

Richard,
I already printed it and brought it home to the wife. She loves the Ahi Poke from Roy's resteraunt and could never figure out the recipie. Thanks for the info, now we have a chance to put more fish on the menu at home.

This chutney sounds fantastic and I can't wait to have a go and make some. Do you think it will work without the sugar (my dad is diabetic) or is that part of the preservative or is it just to add sweetness against the vinegar if so can I use dates for example. hopw you can advise,, and i am so loving your receipe, Its really inspired me to get back to good cooking.

Figured I would share a family secret recipie for a great party dip. We break this out at football games and holiday parties and EVERYONE wants the recipie.
Ingredients: 1 jar hot mango chutney 8oz block of cream cheese 1/2lb THICK sliced bacon 1 box town house crackers 1 8"X8" shallow aluminum pan Directions: Put the bacon in the freezer for half hour to firm up, then chop the bacon into small squares (1/4"-3/8" pieces). Fry the bacon in a pan and thoroughly degrease on some paper towels. Be carefull, the small pieces of bacon will go from perfect golden brown to BURNED in less than 30 seconds, so be quick about pulling the bacon out of the grease at the end. Spread the cream cheese evenly in the aluminum pan. Cover the cream cheese evenly with the mango chutney. Sprinkle the bacon on top of the chutney. Heat in the oven at 350 degrees for 10 minutes until the chutney starts to bubble. Serve with crackers and stand back. You will get trampled under foot if you are between anyone and the dip. WARNING: I GUARANTEE that you will burn the roof of your mouth because you can't wait for it to cool down before eating. I use the Hot Mango Chutney from Publix. It is in a small glass jar in the ethnic food isle. I am sure that it is loaded with sugar or sucrose or some other stuff that is not diabetic friendly, so be sure to read the jar before you jump in.
