Here's the scoop on AJ's:
On the Atlantic side they're known for being very wormy. In the Gulf--regardless of size--they're generally clean. The places to find a wad-of-spagetti-looking worm are right at the tail, just under the dorsal fin, or right behind the gut pocket. I've cleaned hundreds of AJ's from Destin to Biloxi, and never found them just slam full of worms, like I hear the Atlantic ones are.
Regarding your grouper, that appears to be a scamp, not a yellowmouth. There are very subtle differences. They taste the same, though, so it doesn't matter all that much.
