I'm guessing you're defrosting the entire flat to re-freeze in smaller portions, or to rig, then freeze individual baits?

With squid, the color is the first thing to go. A very slow defrost, while still in the packaged flat, will retain the color and "flavor". So like Nick said, let 'em defrost in a cooler for 24 hours..
