Default Mutton techniques?`

Anyone care to share their favorite Mutton techniques?

Like what to look for when reading the bottom machine?
Ledges or scattered rocks? Depths?
Do you mark fish on finder first upcurrent or past the structure/
Best time early morning or midday or eve?
Are they current motivated? Swift or slow current?
Do you use a chum bag north of Ft Lauderdale? One on the bottom one off the back of the boat?
Are 20-30-50 yards of flourocarbon really necessary?
I saw one guy hand lining them with a heavy weight straight off the transom and a swivel/breakaway clip suspending his fishing line off the bottom with his bait 30 yards behind gently swaying in the current? He managed 2 lines at once. He caught some big ass fish.
What is your bait of choice? Grunt plugs, greenies etc...?
Cant I just use an egg sinker on my main line with 15-20 ft of flourocarbon and a single hook Grunt or ballyhoo plug?
Does anyone drift over structure for Muttons or do you need to anchor?
